The Charm'tastic Mile Strip Chesapeake Style (Recipe)

The Charm'tastic Mile Strip Chesapeake Style (Recipe) is a signature cut strip steak for the City of Baltimore. The Charm'tastic Mile is the name for the 1.3 mile corridor that runs from MLK Jr. Blvd. & Pratt Street to Harbor East. The Charm'tastic Mile Strip Chesapeake Style is a 13 oz. cut steak with super lump crab meat and jumbo asparagus. In Baltimore its The Charm'tastic Mile Strip not the New York Strip. The Charm'tastic Mile Strip Steak is 13 oz. in weight.

2-13 oz. Charm'tastic Mile Strip cut steaks seasoned with salt & pepper
6 oz. super-lump crab meat
10 large asparagus spears
1/4 cup unsalted butter
1/4 cup chopped parsley
2-3 sprinkles of old bay seasonings

-Take (1) large grill pan and (1) 12 inch sauteed saute pan
-Take out 2-13 oz. Charm'tastic Mile Strip Steaks 20 minutes before cooking
-Preheat grill pan 2-3 minutes on medium-high flame before placing steaks on pan
-Preheat saute pan  with 1 cup of water for 1 minute.
-Cook steaks for 3 minutes on each side (recommended temperature for steaks are medium rare (130*). Served temperature (140*).
-While steaks are cooking on first side. Place asparagus spears in boiling water and cook for 3 minutes with lid on top of pan.
-When turning steaks to second side. Drain of water from asparagus. Dry pan completely and place back on medium-high flame.
-Add 1/4 cup of unsalted butter. When butter melts add 6oz. of super-lump crab meat. Place asparagus in saute pan with crab meat. Add parsley and 2-3 sprinkles of old bay seasonings. Toss for 45 seconds to 1 minutes. Take off flame.
-Steaks should be done. Place steaks on 10 inch dinner plates.
-Top each steak with 5 asparagus spears and 3 oz. of super-lump crab with parsley.
